Vietnamese Vegan Spicy Mocked Beef Noodle Soup -

Ingredient:



 

A. Vegetable stock (you can use premade vegetable stock to save time)
2.5L of water
2 apple
1 can of sugar- cane
1 jicama  
3 carrot
1 asian radish
nửa cái bắp cải  - half to one whole cabbage

B. 150g vegan beef or any other kind of vegan protein (optional if you cant find them at Asian market). I used dry vegan-beef, so I soak them ahead to hydrate them. Then squeeze out water and marinated the protein with soy sauce and pepper
1 small box of firm tofu – about 350g
3 stalk of lemon grass, give them a slight smash to release oil
1lb (450g) of fresh mushroom
1 stalk of leek, thin slice the white stalk only (you can add the green part in the vegetable stock)
2 tbsp. of ground lemongrass

C. Mixed Spice:
2  cube of the spicy soup (skip if you cannot find it)
2 tbsp. paprika
1 ts of onion powder
1 ts of ginger powder (you can use chopping ginger if you cannt find this)

D. Additional Ingredient for serving
Vermicelli, cooked according to the package  
Mint, cilantro, bean spout, thinned slice onion
½ cabbage, think sliced them
Chili or Jalapenos, lime or lemon

Cooking Process:

A.      Vegetable stock:
-          Boil water
-           cut the stock ingredient into big trunk about 2 inches thick and cook until achieve the taste of stock (use vegetarian stock if you want to save time).
-          Discard the vegies because you already extract all the favor from them.

B.     Prep:
- Protein: Sautee some leek with some oil, add the mocked beef protein to sautéed. Then the protein mixture and smashed lemongrass stalk into the vegan stock. Bring to boil
- Mushroom Prep: Sautee ground lemon grass until golden brown. Add mushroom and the mixed spice. Stir this mixture for a min (Please don’t let the spice burn, it will make the soup taste bitter)
- Add the mushroom mixture into the vegan stock. Add the spicy beef cube favor and 1 tbsp. of sugar. Add salt to taste.

C.      Serve:

-          Add cooked vermicelli. Add the soup. Sprinkle some thin slice onion, chopped scallion, and cilantro

-          Enjoy the soup with some Mint, slice cabbage, lime, chili on the side.

Although it seems like a lot of ingredients, this dish is really easy to make for your family, and friends. They are warm and packed with favor. Please enjoy on a cold day or just any day you feel like making it
